GF Creamy Lemon Dill Pasta with Crispy Steelhead Trout

I wanted a summer weeknight meal that tasted like we went to a 5 star coastal restaurant — steelhead trout seared deeply golden and crisp, sitting on gluten free fettuccine under a silky lemon-parmesan cream. Including mushrooms, sun-dried tomatoes, and fresh lemon, all buried in a heavy garnish of fresh dill and parsley for a gorgeous flavor infusion. Two pans, thirty minutes, and incredible plating presentation for two.
Ingredients
2 steelhead trout fillets
1-2 packages of Trader Joe's GF egg fettuccine
2 lemons, juiced
2-3 cups of Fairlife lactose-free whole milk
Fresh parmesan, block, grated to taste
1 cup of mushrooms, sliced
¼ cup sun-dried tomatoes (oil-packed), chopped
Olive oil
2–3 cloves garlic, minced
Fresh dill, plucked, generous
Fresh parsley, plucked, generous

Instructions
Heat olive oil in a wide pan over medium-high. Sear the trout skin-side down first, then flip — cook until deeply golden and crisp on both sides. Remove to a bowl and set aside.
Start boiling a pot of water for noodles later — we won't add them until step 7.
In the same pan, pour off any excess oil, leaving just enough to sauté in. Add the sun-dried tomatoes and mushrooms, then the garlic. Sauté until the mushrooms are soft and the garlic is fragrant.
Pour in the milk, then stir in the parmesan until it melts into the sauce.
Salt heavily
Add the lemon juice and stir until the sauce is gently bubbling.
Now drop the gf trader joes egg fettuccini noodles into the boiling water and cook 3–4 minutes per package instructions.
Drain the noodles, then tong into your serving bowls with each trout filet (or you can set the filets on top)
Pour the warm lemon-parmesan sauce over the top.
Finish with a heavy garnish of fresh dill and parsley — this is truly what makes the dish incredible.
